I can\u2019t say enough good things about the quality of the fruits and veggies and their customer service has been top notch as well! This week\u2019s bin included some leeks. I had some potatoes on hand, so naturally, this vegan potato leek soup was born! Cold weather has me craving warm, simple foods. This was so easy and so delicious.<\/p>\n<p>Here\u2019s what you will need:<\/p>\n<p>2 tbsp of avocado or olive oil.<\/p>\n<p>2 medium sized leeks (sliced). Only use the white and light green parts of the leek. Save the rest for vegetable stock!<\/p>\n<p>5 medium sized yukon gold potatoes (peeled and diced)<\/p>\n<p>1 large clove of garlic minced.<\/p>\n<p>6 cups of vegetable stock (I use GoBio Boullion cubes if I don\u2019t have any Homemade stock)<\/p>\n<p>2 Bay Leaves<\/p>\n<p>1\/4 tsp of thyme (dried) or use a few sprigs of fresh time<\/p>\n<p>Salt and pepper to taste<\/p>\n<p>Optional toppings for serving: Top with chopped parsley or micro greens, vegan (or regular) shredded cheddar cheese.<\/p>\n<p>Here\u2019s what you do:<\/p>\n<p>Heat oil in a large saucepan and sautee sliced leeks (only use the white and light green parts). Once softened, add in minced garlic.<\/p>\n<p>Add all but 1\/2 cup of the diced potato. Reserve the 1\/2 cup chopped potato for the last 15 minutes of cooking.<\/p>\n<p>Add stock and herbs.<\/p>\n<p>Simmer for about 40 minutes, remove bay leaves and thyme twigs if you\u2019ve used fresh thyme, and puree to desired consistency.<\/p>\n<p>Add the remaining 1\/2 cup of potato for the last 15 minutes of cooking- This will give the soup a chunkier consistency.<\/p>\n<p>Add salt and pepper to taste and desired toppings and serve.<\/p>\n<p>Enjoy!<\/p>\n<\/div><\/div><\/div><\/div><\/div>\n","protected":false},"excerpt":{"rendered":"","protected":false},"author":2,"featured_media":2892,"comment_status":"closed","ping_status":"closed","sticky":false,"template":"","format":"standard","meta":{"footnotes":""},"categories":[26],"tags":[],"class_list":["post-2890","post","type-post","status-publish","format-standard","has-post-thumbnail","hentry","category-recipes"],"yoast_head":"<!-- This site is optimized with the Yoast SEO plugin v27.5 -
